Authentic Italian food in Clark Philippines. Yes, a long-time cherished chef, originally from Switzerland, claiming residence in Manila for the last 25 years, is at it again. This Swiss chef simply fell in love with the country, the people and its cuisine and never left. Chef Chris Locher has created quite a reputation as a high-end Italian chef on the Island of Luzon since arriving with his recipes.

Amare means beloved in Italian. There is one thing for sure, chef Chris is beloved by his loyal food fans. He serves a fusion of Italian-Mediterranean cuisines, now at his new restaurant location, Amare by Chef Chris in the Royce Hotel in the Clark Freeport.
PANIZZA/ROLLIZA A VARIATION ON PIZZA
Chris’s own personal accomplishment shines at all his restaurants, it is called Panizza, also known as Rolliza. This is a unique take on thin crust pizza. Panizza has an ultra-thin rollable crust pizza awaiting for you to roll it up with supplied fresh sprouts and basil in the center of your completed masterpiece. This dish is his signature dish. It is not only our favorite but also the favorite of many in the Pampanga area for many years.
Upon arriving in the Philippines, Chris’s original venture has been his restaurant, My Kitchen by Chef Chris. This restaurant is in the Oasis Hotel in the Paco Park district in Metro Manila. This hidden gem has served the Metro Manila area’s Italian seeking gourmets for many years. My Kitchen by Chef Chris has been a secret little Mediterranean haven for hungry locals and tourists alike. Many have returned to this culinary establishment for years when that uncontrollable craving for good Italian food overtakes them.
Being or Italian decent myself, and having enjoyed many outstanding meals dating back to the mid-2000s at C’s Italian Dining in Angeles City, I can tell you that is doesn’t get any closer to authentic Italian food in Pampanga, and most of Luzon even, than Chris’s restaurants. You can tell by the quality and flavor that he uses superior ingredients in his preparations. Our family favorite has always been the thin crust, roll-up Panizza with fresh sprouts and basil stuffed in the middle and Chris’s special chicken cacciatore.
A popular Rolliza Panizza is called the Amare. This sensory delight contains prosciutto de Parma, sun-dried figs, sun-dried tomatoes, and gorgonzola cheese. Add the alfalfa sprouts and fresh arugula and a little bit of chili oil before rolling it up and you have the spice of life in a roll.
For a unique pasta dish try the Spaghetti Therese. Here you will get a salmon fillet with shrimp in virgin olive oil with anchovies, green asparagus, rapini, and mushroom slices. This is a pasta unlike any you have likely tried.
First timers often try the Chef’s special called Salsiccia All Uva. This is a homemade pork dolce sausage cooked in light wine sauce with grapes, shallots, and leek served on parmesan polenta.
Risotto Cato is wagyu ox-tongue slices with tomatoes, capers, Kalamata olives, and fresh herbs with parmesan and butter topped with rapini.
Steaks here are always tender and delicious and cooked to order, just the way you want it. Salads are fresh and wonderfully mixed with just the right combination of ingredients and salad dressings. The salad Kristine contains greens, grapes, apple, oranges with balsamic vinegar and grape seed oil.
